Tried this at the release during the 12th Brewgrass festival in Asheville. Pours jet black with a light tan head. Strong dark chocolate malt shines through and masks the alcohol. Very low hop profile make this beer an excellent after dinner treat. I picked up a case of bombers just for the cellar!

Taste reminded me of big hoppy and a shot of JD, which makes sense. The warming effect of the alcohol was noticeable and easily blamed on the whiskey aging. Some vanilla, oaky notes come out (maybe from the whiskey itself, maybe from the wood of the barrel).
I enjoyed this beer a lot and hope they decide to brew this regularly.

Typically an aged beer takes on a nice port flavor as the alcohol and hops mellow and sweeter fruit flavors begin to emerge (see 2005 Edition below). This was not exactly the case with the 2000 Grand Reserve we had tonight. While the alcohol did mellow, it was never that strong tasting in the fresh bottles. The beer was a bit flat and a bit bland and bitter.
Perhaps Chimay's beers are not meant to age since they changed their recipe in 1995.

The draft, named painstakingly by Samuel L. Jackson, literally got me drunk...I was fucking fat girls in no time. Mmmmm Mmmmm, Bitch! The beer was successful at removing the taste of weed and hooker spit from my mouth, but made me very temperamental. After picking a fight with a group of handicapped people, I was dragged out of the bar yelling "Yes they deserve to die, and I hope they burn in hell!" |

This cask poured a nice brownish color with little auburn highlights in the light. Kind of murky glow with very little head. It smells very acidy and sour, typical of a Jolly Pumpkin. The flavor is much more subdued than the aroma, however, with a mild sour taste. Carbonation is nice and low with a flavorful wood (cherry wood chips?) taste that ends nicely. Mouthfeel is light and easy. I can't wait until this beer hits bottle!

This beer was a yellowish blond with a very farmhouse appearance. A nice white head formed on top. I could smell a citrusy hop aroma. The taste was rather impressive for a cask as it held its carbonation and hop presence quite well. Unlike most British IPAs, this had a crisp, citrusy hop bitterness. The mouthfeel was pleasantly creamy with very little weight.

This is a truly amazing beer. It pours a beautiful color of ruby red with lighter notes shining through the semi-clear liquid. A soft pink head forms on top but does not last long. The smell is of slightly acidic cherries, hay stacks, and horse blanket. The taste is very puckering but with the cherry finessing away the bite. This is one of my favorite styles and one of my favorite examples of the style. Frank Boon blends beautiful aged lambics in this offering for an unforgettable treat.

This Lager was clean and pure. A slight white head with ever so slight aromas of corn, hops, and wife beating. Carbonated throughout, eternally refreshing, and thirst quenching. The only downside was waking up in a gutter and feeling like poor white trash.

This ale poured a nice brown color, typical of a dubbel or quad (i.e. belgian strong dark). It smelled of prunes, plums, and raisins. Tropical notes (papaya?, guava?) emerge when you sniff a bit closer. The taste was very similar to the smell. I never really noticed the 10% ABV. Cellaring this beer for 3 years has done great work to mellow its bite. Smooth and creamy mouthfeel, all around a very enjoyable beer, perfect as an apertif.
