Junior Mint Cheesecake

Crust
* 2 cups graham cracker crumbs or chocolate cookie crumbs
* 3 tablespoons sugar
* 6 tablespoons melted butter

Filling
* 6 ounces Junior Mints candies, frozen
* 3 packages (8 ounces each) cream cheese, room temperature
* 2/3 cup sugar
* 3 eggs
* 1 teaspoon vanilla extract

Prepare crust. Combine crumbs, sugar and melted butter. Press into bottom and up sides of a 9-inch springform pan.

With electric hand-held mixer, beat cream cheese and sugar until smooth. Add eggs, one at a time, beating well after each addition; stir in vanilla. Pour cheesecake batter into prepared crust. Chop frozen Junior Mints and sprinkle onto the cheesecake batter. Bake for 40 to 45 minutes in a 350° oven or until just set. Cool on wire rack, then chill several hours or overnight. Makes about 8 servings.

Junior Mint Brownies

1 (5.5 oz) box Junior Mints
1 1/2 cups melted butter
3 cups sugar
1 Tbsp. vanilla
5 eggs
2 Cups flour
1 cup cocoa
1 tsp baking powder
1 tsp salt

Preheat oven to 350:F. Grease a 13x9 inch baking pan. In a large bowl, stir together butter, sugar and vanilla extract. Add eggs, beat until well blended. Stir in flour, cocoa, baking powder and salt. Blend well.

Reserve 2 cups batter. Spread remaining batter in prepared pan. Arrange Junior Mints in a single layer over the batter. Spread the remaining batter over Junior Mints.

Bake for 50 to 55 min. or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Cut into squares.

Another easy way if you are in a hurry is to mix up your favorite brownie mix, bake as directed, and as soon as they come out of the oven, spread the Junior Mints out over the top and cover tightly with foil until the candies begin to melt. Then spread in swirls across the top and let cool.

Cooking spray
1/4 cup butter or stick margarine
32 creamy, small size mints in pure chocolate*
1 cup all-purpose flour
1/4 teaspoon baking soda 1/8 teaspoon salt
2/3 cup sugar
1/3 cup unsweetened cocoa
1 large egg
1 large egg white

Preheat oven to 350° F. Coat bottom of an 8 inch square baking pan with cooking spray.

Combine butter and mints in a 2 cup glass measure; microwave at high 30 seconds or until soft. Stir until smooth, and set aside.

Lightly spoon flour into a dry measuring cup, and level with a knife. Combine flour, soda, and salt in a bowl. Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed of a mixer until well blended. Add mint mixture; beat well. Add flour mixture; beat at low speed just until blended. Pour batter into prepared pan. Bake at 350° F. for 20 minutes or until a wooden pick inserted in center comes out clean; cool completely on a wire rack.

Yield: 16 brownies (serving size: 1 brownie).

Tootsie Roll Junior Mint® Parfait

Equipment:
4 to 6 parfait glasses or tall glass tumblers, electric mixer.

Ingredients for the Parfait:
1 box brownie mix (19.8 oz. box)
2 cups chocolate sauce
1 pint of premium vanilla ice cream, softened 10 minutes in refrigerator
2 boxes of Junior Mints® (1.84 oz. boxes)

Ingredients for the Whipped Cream Topping:
1 cup whipping cream
1/4 cup powdered sugar, sifted
1/2 teaspoon vanilla

Make the Brownies

1. Prepare and bake the brownies as directed on the box.
2. Cool completely and cut into eighteen 2-inch squares.

Make the Whipped Cream Topping

1. In a medium mixing bowl using electric mixer, combine the cream, powdered sugar and vanilla. Beat until stiff peaks form. Set aside for assembly.

Assemble the Parfait

1. Place a brownie square in the bottom of a parfait glass or tumbler.
2. Sprinkle 2 or 3 Junior Mints® on top of the brownie.
3. Place a small scoop of ice cream on top of the mints.
4. Pour a small ribbon of chocolate sauce on top of the ice cream.
5. Sprinkle 2 or 3 Junior Mints® on top of the sauce.
6. Repeat the process until you reach the top of the parfait glass. Garnish with whipped cream and Junior Mints®. Makes at least 6 parfaits.

Junior Mint Cookie

2 boxes Junior Mints
1/2 cup margarine
1 cup sugar
2 tbsp vanilla
1/2 tsp salt
2 eggs
3 1/2 cups flour

Cream margarine and sugar. Add vanilla, salt and eggs. Mix well. Blend in flour. Shape into about 1" balls. Press 1 mint in center of each. Bake at 350 degrees for about 7 minutes.

Chocolate Junior Mint Cookie

3/4 c. Crisco or shortening
1 c. firmly packed brown sugar
1/2 c. sugar
1 egg
1/4 c. water
1 1/2 tsp. vanilla
1/2 tsp. soda
1 c. flour
3 c. oats
small package chocolate chips
Junior Mints

Beat shortening, brown sugar, sugar, egg, water, and vanilla together until smooth. Add: 1/2 tsp. soda 1 c. flour 3 c. oats
Stir in small package chocolate chips. Drop by spoon on cookie sheet. Push one Junior Mint into center of each cookie. Cover with small dab of dough. Bake at 350 degrees for 10-15 minutes.

Devilish Minty Cookies

1 (18.5 ounces) package devil's food cake mix
1/3 cup vegetable oil
2 eggs
3/4 cup coarsely chopped Junior Mints (it helps to freeze them first)

1. Preheat oven to 350°.
2. Coat 2 cookie sheets with nonstick cooking spray.
3. In a large bowl, combine cake mix, oil and eggs and beat with an electric mixer on medium speed 3 to 4 minutes or until well blended.
4. With a spoon, stir in mint candies.
5. Drop by teaspoonfuls 2 inches apart onto the cookie sheets.
6. Bake 9-11 minutes, or until firm.
7. Transfer to a wire rack to cool completely.
8. Store in an airtight container until ready to serve.

Junior Mint Chocolate Sauce

1 cup Junior Mint candy, no substitutes
1 tablespoon butter
2 tablespoons whole milk

Combine mints, butter, and milk in a microwave safe bowl. Cook on high 1 minute until mixture is hot. Stir the sauce until smooth.
You can also make this on the stove top by heating the mints, butter and milk over low heat in a small saucepan.

The sauce will thicken as it sets. Makes about 2/3 cup.

Mint Mousse Tart

1 (13 ounces) package brownie mix (8x8 sized)
1 (8 ounces) package cream cheese, softened
1 (7 ounces) jar marshmallow creme
6 ounces Junior mints (4 1.6 oz boxes)
1 cup heavy cream, whipped

1. Prepare brownie mix according to directions but in a greased 9 inch round pan.
2. Cool completely.
3. Beat cream cheese until smooth.
4. Blend in marshmallow creme.
5. Melt junior mints (either in small saucepan stirred over low heat or in micro 1 1/2 to 2 minutes stirred til smooth.) Stir in melted junior mints into creamed mixture.
6. (chocolate will form slivers in this mixture) Fold in the whipped cream.
7. Spread over brownie.
8. Loosely cover and chill several hours or overnight.
9. Cut into wedges and serve.

Mocha Mint Mousse Tart

Ingredients:
1 pkg. (13 oz.) brownie mix
1 tbsp. hot water
1 pkg. (8 oz.) cream cheese, softened
1 jar (7-1/2 oz.) marshmallow creme
4 pkg. (1.6 oz. each) Junior Mints
1 tbsp. instant coffee
1 cup heavy cream, whipped

Directions: Prepare brownie mix according to package directions in a greased 9-inch round pan; cool. In a mixing bowl, dissolve coffee powder in water; add cream cheese. With electric mixer, beat mixture until smooth; blend inmarshmallow creme. Melt Junior Mints; place in a microwave-safe bowland heat on HIGH for 1-1/2 to 2 minutes, stir until smooth; OR place in asmall saucepan and stir over low heat. Stir in melted Junior Mints (the chocolate will form slivers in the mixture). Fold in whipped cream and spread onto brownie. Loosely cover and chill several hours or overnight. serve, cut into wedges and garnish as desired.

Juniory Minty-Mocha-ey Chocolatey Gooey Pudding

2 3 oz pkg. chocolate instant pudding
1 can sweetened condensed milk
2 cups milk
2 T. mocha-mint coffee powder [optional]
10 pkg. mini-junior mints, melted [pkg of 10/$1 @ Dollar Tree]
20 chocolate wafers
Whipped topping

Melt junior mints however you melt chocolate (double boiler, microwave, etc.) .

Combine all ingredients except wafers. Spray bowl and try your hand [and your patience] at making them climb up the inside of bowl, one at a time. Then very carefully, pour pudding mixture into wafer-bowl. Add Cool-Whip now or when ready to serve.

Junior Mint Shake

Fill blender half full of ice cream. Add enough milk to just cover the ice cream. Pour in junior mints. Blend all together until smooth, then serve.

Variation

Alcoholic Beverages Inspired by Junior Mints

Directions/Comments: Blend ingredients together. It should be thick. The great thing about this drink is that the sorbet is fat free instead of using ice cream for those of you who are weight-conscious. Also, you can always add more schnapps if you want to make it stronger and it'll still be good. But be careful....it has a VERY high buzz factor.
